Scandinavian Almond Cake When I started a new job this fall, my new boss insisted on having a gathering of sorts, to introduce me to the building {she’s so incredibly thoughtful!}. She brought this ridiculous Scandinavian almond cake- it’s dense and moist, like a poundcake, and not too sweet. I begged her for the recipe and have made it probably a dozen or so times in the two months I’ve had it. I think part of the reason I like it is because it’s an adult take on dessert; it’s simple and straightforward, and not covered in buttercream, or cream cheese, sprinkles. Almond bread feels like what grown folks are supposed to eat for dessert.AlmondCake Scandanavian Almond Cake

  • 2 tbsp almond slices
  • 1 ¼ cup flour
  • ½ tsp baking powder
  • 1 ¼ cup sugar
  • 1 ½ tsp almond extract
  • 2/3 c milk
  • 1 egg
  • 1 stick butter, melted
  1. Preheat oven to 350.
  2. Spray pan with Baker’s Joy (best so it doesn’t stick!).   Sprinkle almonds.
  3. Combine flour and baking powder in a medium mixing bowl.  Add the wet ingredients and mix well. Stir in sugar.
  4. Add melted butter, stirring to combine.
  5. Pour batter over almonds.
  6. Bake for 40-50 minutes.  Cool in pan for about 10 minutes before removing from pan.
